Convert more select helpers to selectOptions

  • The excludeUntrained value for proficiency levels only existed in the templates so I removed it.
  • The key attribute dropdown in the NPC spellcasting tab was non-functional and redundant so I removed it.

Untested because unsued (I think):

  • "systems/pf2e/templates/items/activation-panel.hbs"
  • "systems/pf2e/templates/items/affliction-details.hbs"
  • "systems/pf2e/templates/items/affliction-sidebar.hbs"
