Re-create Nx workspace

We use Nx as a monorepo and build tool. However, the latest update fails due to weird peer dependency issues. It took me a few hours, even with AI assistance, to give up and be not able to solve this.

My idea is to create a fully new Nx workspace and migrate the projects. This gives us the opportunity to catch up with the latest project structure ideas from Nx.
