Update rubygem license metadata to Apache-2.0

Update the gemspec metadata to reflect the current LICENSE.

Previously the project was licensed under MIT but was changed in 8eb9daeb27cb713b9c398f733c6646c586d5df59 to Apache-2.0

This is relevant for automated tooling that checks licenses and might only view the gemspec metadata.
