rename output plugin name from 'es' to 'elasticsearch'

Isn't confusing having a plugin name called es ?, this comes from the time where Fluent Bit was mostly used from the command line to just abbreviate the name.

This issue is to propose to finally rename es to elasticsearch.

I think we need to keep the old name working at least for a while though, we should be able to have an alias for plugin naming I think.
