Publish almalinux 10 build

Today almalinux 8 and 9 is relesed to https://packages.fluentbit.io/almalinux/ can we also submit a relese for version 10 for almalinux?

Sure, it just needs someone to submit the PR to do it. Have a look at the packaging directory, we use a containerised build process for everything and there is a recent example PR you can follow.

Time is my main blocker: it's holidays in most of Europe in August so I've certainly not been doing any work!

There's a related Debian Trixie one you can look at but ultimately this is a pretty straightforward PR if you want to send it @jhansonhpe then I can just review on mobile :)

It's closed automatically by the PR but obviously we will need a release to actually publish the binaries.

I've backported to 4.0 as well (including the Debian Trixie build from #10728): #10907
