Text color not driven by theme variables

Similar to #2256, the text color in light or dark mode is not driven by one of the material 3 theme color variables. I would expect to see a change in text color when the page.theme.color_scheme.on_surface variable is changed but this is not the case, neither is it for any of the other named theme colors mentioned here: https://flet.dev/docs/reference/colors/
