I would love to create flatpak for rapid-photo-downloader but i cannot use the pip tool because it now use hatch and have only a pyproject.toml if they are any tool i miss ?

pyproject.toml should be done by https://github.com/flatpak/flatpak-builder-tools/pull/332, hatch is the buildsystem, it doesn't have to do anything with pyproject itself.
