Docker Compose Run issues need fixing

When we deploy using Docker Compose (latest version ?? )

there are issues with the scripts which needs to be fixed for repeatable installs

Steps to Reproduce:

1. Git Pull finos/ legend from Github
2. Build .env file as per guidance
3. Simply run using dock-compose

Expected Result:

All containers deployed without errors ; services up & running fully

Actual Result:

Gitlab container configuration fails to create Application "Legend Demo" Gitab container throws errors trying to install jq package Scripts fail when apt-get is blocked within locked down hardened environments Also Gitlab GITLAB_POST_RECONFIGURE_SCRIPT: /scripts/setup-gitlab.sh fails SSL keys & certs generated from setup.sh does not get copied over into the respective containers (sdlc, engine etc.) All Legend containers fail with script not found error (usually for /scripts/gen_config.sh)

Environment:

RHEL8 with Docker Services (20.10.2) up & running

Additional Context:

With various hacks to manually setup gitlab locally and then with a custom docker-compose.yml we were able to setup & have a working prototype
