Upgrade to FFmpeg 6.x

Is your feature request related to a problem? Please describe. When will you upgrade to FFmpeg 6.x ?

We cannot upgrade to n6.0 as ffmpeg bin only supports multithread at the moment. in the docker file..

@JohnRSim Looks like the ffmpeg 7.0 supports multithread console. Would you please consider upgrade to 7.X ?
