I've been able to extract an assortment of WADs from the RomFS section of the Switch release of DOOM I + II:

• id24res.wad
• iddm1.wad
• masterlevels.wad
• nerve.wad
• plutonia.wad

• sigil2.wad
• tnt.wad

The same files are listed as part of the installation folder over at SteamDB, so it should be the same with all releases of the id/Nightdive version.

As a note, the Steam version also comes with the DOS version, and the uncensored ROMs - and the individual Master Levels wads. There's nothing to extract, all the files are in the directories.
