Try to migrate to Vite

We've tried before to migrate from webpack/mix to Vite, but it has failed for one reason or another.

The main reason being that jQuery (which we unfortunately rely on) has not supported ES modules.

That changed with jQuery 4.0.0 ... So we're gonna try this again.
