[R-283] Adding more `token_usage_parser`s for various LLM providers

There are a lot more LLM providers for whom we don't have parsers. We would really apprecite you inputs here in

1. suggesting parsers that you need. This will help us prioritize which ones most used.
2. contribute your own. If you make any for your usecase do consider contributing back too 🙂
