Update documentation after introducing spago

The documentation requires reworking when the dust settles a bit on getting everything working for Exercism v3. I've created this issue as a simple reminder.

Some thoughts:

• Figure out which docs are still relevant (docs/*) and update
• Avoid overlap with Exercism v3 docs where possible
