react: update tests and version file (v1.0.0 -> v2.0.0)

Please update the version specified in the react version file from 1.0.0 to 2.0.0.

This update has been caused by the application of a new input policy, change in the shape of data, and the addition of new test cases.

Please additionally update the test suite to match the canonical-data. The reference solution should also be updated to pass these new tests if it doesn't currently.
