Sync docs with problem-specifications

This brings in recent improvements to the docs for all practice exercises.

Please don't merge this PR before https://github.com/exercism/emacs-lisp/pull/254 and https://github.com/exercism/emacs-lisp/pull/255 as the updated instructions change the requirements in a way that the instructions don't match the tests anymore.

Edit: Nevermind, I read the instructions the wrong way. The update for word-count only clarifies the wording and the update for roman-numerals change the requirements, but not in a way that contradicts the current tests.
