ci: consider adding Nim devel to matrix

We could run the tests workflow with Nim devel, but allow it to fail.

This is easier now that we've bumped to Nim 2.0.0 (https://github.com/exercism/configlet/commit/fa7d0bba04aa36a8b721a0e0b71d728bf3533d06).
