Leverage organization name for email service

Org name will be needed for email sending. See https://ethyca.atlassian.net/wiki/spaces/EN/pages/2417524837/Email+Service+Integration

We should follow what we currently do for fidesctl- https://github.com/ethyca/fides/blob/main/demo_resources/demo_organization.yml
