Review approach to rendering specs in docs

Currently I am using redocusaurus for rendering the OpenAPI specs in the docs. I would like to re-evaluate if this is the best choice in terms of UX, especially with respect to this idea of reorganizing endpoints by use case, and perhaps choose a new method for rendering the specs.

I would also like to look closer at redocusaurus / redoc options to see if perhaps there are options with could be used to improve the current UX.
