Daily DEX Volumes - Dune API

Use Dune API to pull daily trade volumes at a pool level from dex trades.

We currently have Defillama DEX Volume data, which covers a nearly exhaustive list of chains and DEXs. But we can use Dune to pull pool-level data in the interim, to identify what is moving top-level metrics.

^ We can also use this as a backup for DEX volume in cases where Dune may have a chain or DEX that Defillama doesn't (i.e. short-term gaps in Uni v4)
