EspHome AC_DIMMER component enhancement request

Please describe your use case for this integration and alternatives you've tried:

I am requesting a modification to the AC_DIMMER component.

What I need is for the max_power parameter to be adjustable, either through a template or an action, so that I can have full control over the output.
