I suddenly have this issue too now, after everything was working just fine. Exact same output, stuck on [2/16 Headers] Waiting for Consensus Layer.... Except my CL is Lighthouse v3.1.2-01e84b7
I'm having the same issue in mainnet with the experimental lightclient also
