Bring back the CI action to build/test on Mac

During the net6.0 workload changes, I found a situation where the build failed on Mac due to what appeared to be an external bug. Not too surprising as all that stuff is in preview. Anyway, I temporarily removed the Mac platform from the github actions build. It wants to be come back.
