gateway Show helm values way to enable backend

Description: As Backend is not enabled by default, here it is shown how to enable it and here the enablement is not even mentioned.

At helm values, this is activated at:

config:
  envoyGateway:
    extensionApis:
      enableBackend: true

I'd like to have this better documented in the helm approach.

The Issue was assigned to someone else, But given no activity in past 2 months and no linked PRs, I implemented it instead. If there are any amendments feel free to suggest, & if the implementation is correct then please merge it.
