Update theming documentation to be more clear

I'm personally having a hard time grasping some of the theming. I would like to override the primary/secondary colors while using the base material styles provided by UI, but the documentation doesn't cover the steps to do this that I can find. Can the docs be updated to include a scenario about overriding provided colors?
