Allow to set ipFamilies in service and disable the module

Hello, with the current latest chart 8.9.1, is not possible to:

  • disable the default module
  • in the service, provide a list of ipFamilies.

I will submit a PR to enhance this.

The above items, are required to install two emissary in the same namespace, to support both ipv4 and ipv6 at the same time, until https://github.com/emissary-ingress/emissary/issues/4012 is fixed.
