Convert all existing operators to `Mogrify.Option` entries

I was thinking we should probably keep the existing functions around for a while, and take time to decide whether to deprecate them, or if there is a better way of delegating those functions to the new-style Options. Or if it makes sense to eventually remove them entirely. I'm not sure yet.
