Migrate to Stripe Checkout

We should use Stripe Checkout instead of a custom checkout flow if possible. It looks like checkout already includes shipping address collection taxes, items in the cart, etc as well

Sounds a lot less privacy friendly. Are any benefits voided by paying with Stripe as the only option?
