Doc: General doc improvements related to revamp of Logstash config section

This issue serves as a place to capture and track tangential issues and improvements surfaced during work on issue #14262 and PR #14032.

In the course of a phased docs overhaul (https://github.com/elastic/logstash/issues/14262), important and valuable comments surface that may be out of scope for a particular PR. We want to be sure that we capture and address them as part of the broader scope of work. This issue is that place.

These items were identified during writing/review of https://github.com/elastic/logstash/pull/114032:

  • [x] Evaluate and align "configuring->pipeline" messaging across Logstash docs
  • [x] Evaluate examples to be sure they align with Logstash key value propositions
    • [x] Examples: Find more appropriate examples to replace Apache logs, tailing logs, etc.
  • [ ] What else?
