Switch labels and numeric_labels type to flattened

Change the type of labels and numeric_labels fields to flattened types. This shouldn't need to be considered a breaking change.

Depends on support of flattened fields in ES and Kibana (elastic/elasticsearch#61550, elastic/ecs#1341 (comment))
