Docker upgrades

Cleans up the Dockerfiles a bit but most importantly drops Alpine in favor of a Slim Debian base image which is proving easier to maintain. This made the unoptimized image here about a third larger, but that's only ~50MB and this doesn't matter for me personally at least. All images now use the latest FFmpeg and all three are more uniform in their setup.
