Derive default EE from running environment

Two identified places are EclipseRunMojo and UpdateProductMojo. Example how it's already done is at copied.org.apache.maven.plugin.AbstractCompilerMojo.DEFAULT_SOURCE_VERSION

I will remove the milestone for now, as we are near the release already. This can then go into Tycho 6 and backported for the 5.0.1 release.
