[BUG] - Cannot Change Data Folders

Changing the data folders does not persist and gets recreated on C drive upon launch. Reproducing this is literally just selecting a different data folder. This is a MAJOR problem and is really, really, REALLY annoying.

I tested it yet again today and it worked, so I'm really not sure what's going on here. I'm running it on Windows 11, switching from my C drive (an M.2 NVMe SSD) to an HDD for storage reasons.

This is an issue for me on Linux too. The mods aren't linked when launching games if the data folder isn't in /home/user/. If I use any other mount point like /games then no mods are loaded. There's some hardcoded home directory somewhere that's causing this problem

That has to be what it is, so I'm probably going to go take a look and see if I can find it myself
