Allow to overwrite the roller config without overwriting the keys

@omritoptix Playing around with the roller, I don't think it's required There's a good separation based on the --home directory

So each chain bootstrapped with roller should use a different home directory

And once local network will support mock DA, it will be even less required

After discussion with @yishay-dym we re-open as it makes the process of re-initing and playing with different chain/tokens cumbersome as a user can get stuck without ability for funding as getting tokens from faucets is limited to once a week.

@omritoptix currently the hub enforces that a sequencer address is registered on single rollapp

so this feature doesn't makes much sense right now
