Automatically backup records to Amazon S3 as Disaster Recovery and Versioning?

Storing business-critical data in ElasticSearch is fine. but if we are using a single instance and that instance goes down...? Sure the answer is to use a cluster, but what kind of fault tolerance does the cluster have? What if each time a record is saved a copy is sent to S3 for safe keeping...?
