Upgrade to `Phoenix 1.7`?

At present this demo app uses:

Should we upgrade it to 1.7 RC2?

Instructions to update would be similar to: https://github.com/dwyl/phoenix-chat-example/issues/149 .then we could also update the setup instructions as suggested by @ndrean in https://github.com/dwyl/elixir-auth-google/pull/73#issuecomment-1427670885 💭
