Add back ruby configuration option?

Hi @drwl ! Hope you're doing well. Long time no chat :)

Thanks for helping maintain this gem moving forward for Rails 8.

I was wondering if we can add back the ability to set configuration in plain Ruby (removed in commit caa1ae73a0d11b9924b16f2e802d54215f20fdb7. We had some dynamic options – namely setting model_dirs to a glob directory, which does not appear possible with the YML input version.
