In both [8.x-2.x](https://git.drupalcode.org/project/commerce/-/blob/8.x-2.x/modules/payment/src/Plugin/Commerce/PaymentGateway/SupportsStoredPaymentMethodsInterface.php?k#L27) and [3.x](https://git.drupalcode.org/project/commerce/-/blob/3.0.x/modules/payment/src/Plugin/Commerce/PaymentGateway/SupportsStoredPaymentMethodsInterface.php#L27) versions it's called `createPayment` not `createPaymentMethod`.
