Document using different profile types for shipping information

This came up during an office hour question: how to collect different information for billing and shipping.

We added support for different profile types beyond customer in https://www.drupal.org/node/3072083.

Then in this issue we added support for modifying the profile type used by shipment type: https://www.drupal.org/project/commerce_shipping/issues/3003525

We should document setting up this workflow.
