Handle CoinMarketCap API being down / unavailable gracefully

• Errors should be descriptive (no plain zod errors)
• should not cause full-page 500 errors in dev env
• Ideally in prod, instead of infinitely loading dollar values we would display raw token amounts or at least some kind of warning
