docs: document graphql-apollo

Last time I sent a PR, I only did the feature and while it did get merged, it's difficult for someone to discover & use this.

This issue is a reminder to myself to document this package so that it shows up on docs and contains a readme.

The issue was to document https://github.com/dotansimha/graphql-code-generator/blob/master/packages/plugins/typescript/graphql-apollo/src/index.ts this plugin. But I kinda got busy and couldn't get a chance to actually do it, feel free to take it or close it :slightly_smiling_face:
