next.js starter: Update to latest next.js version

As a stakeholder, I want to make sure our code examples are always up to date.

The nextjs starter is a project we have that render all the starter data, is the same idea as demo.dotcms.com but headless.

Our customers use this to start their projects in next.

We need to keep this up to date.

THIS IS NOT THE SAME AS THE EXAMPLE.

Acceptance criteria

• Update next.js and all other deps
• Make sure it run in dev mode
• Make sure it builds
• Make sure it start the build correclty
