Ok so DisableIoMapperMapping is a pretty edge-case quirk and involves ACPI. This is not going to be trivial to add. We already tell users to disable VT-d anyways, so I'm comfortable leaving this out for later, as long as we document using I225-V/I226-V on Ventura without VT-d (see linked issue). Issue tracking for this quirk is at dortania/bugtracker#330.
