Can migrate to Vite? Vite support rollup plugins under the box

A Vite migration would be much better than gatsby imo

I'd like to up this topic bcs I'm building ui library with react and vite and when trying use docz have a lot of errors with imports, gatsby config, reuire and imports issue.
