Added info about system collections

I have added an old partial description how to use system collections. System collections are saved as directus_<name_of_collection> in database and app, while hooks emit events without prefix.

It seems there was a description about this in the past. But it was removed or changed and information was lost. https://github.com/directus/directus/issues/9575
