Many commits with various changes made primarily for making the codebase compatible with Sphinx automated documentation.

Note: file and directory names have been renamed here and there to discourage hyphens in favor of underscores. Should have been refactored properly throughout codebase.

This branch builds and launches in docker as is

Make sure the openAPI is not broken after having slightly altered their docstring-formatting due to Sphinx

While documentation remains desireable, experience proves maintaining this via Sphinx-based docs is not practical. Closing this for now, may revisit later. Some documentation is available via our wiki.
