Adding extension ".tex" to fmt/280 and fmt/281

Details of change

LaTeX files are using the extension .tex. This information is missing in entries fmt/280 and fmt/281 and should be added.

Additional information

The practical impact of that problem is that the Rosetta implementation of PRONOM raises an issue "Extension mismatch" if any LaTeX file is ingested, as it bases itself on the extension mentioned by PRONOM. As the .tex extension is widely used for LaTeX files, we suggest to add it as a general improvement.
