docs(feat):prepare documentation for docs merge into developer portal

Implements DEVREL-18

This is a work-in-progress to prepare the UI library documentation for the Developer Portal. Several Docusaurus breaking changes are covered here as well, as are a suite of other small changes.

All changes implemented in this PR do not break the current UI documentation, allowing this to be merged before the developer portal is going live with the UI docs
