Add VariableType REGEX into the XmlMatcher

Just like the JavaMatcher (javaplugin) the XmlMatcher(xmlplugin) should provide the variable type REGEX. Therefore:

• [x] Add this type in private enum VariableType
• [x] Add the corresponding case statement in the resolveVariables method

I left it undone because there were more urgent issues.

However, I remember that I was getting close to the solution.

@jdiazgon found this one as pending. Can you have a look at this after the two recent OpenAPI issues such that we can release a new version of the xml plugin when the release script is done?
