Add API documentation

Could we get Swagger or some other form of documentation? Should help with building other SDKs/frontend.

@oddoye-david :+1: on the API documentation. If anybody is willing to take it up and fulfill it. @claudey has a better idea what should be the main (or major) models that need immediate documentation.
