Update dependencies

Update dependencies to the latest versions. Fixes a few critical issues via npm audit.

Note: we are unable to update a few dependencies:

  • react@18 — blocked due to a peer dependency from gatsby-plugin-mdx. Once it gets updated to support MDX 2 then we can upgrade.
  • eslint@8 — at the surface, we are unable to upgrade due to some breaking changes. Need to investigate further.
  • remark packages — unfortunately remark 2 packages use esmodules, which isn’t currently supported by gatsby? Need to look into further.
